The Heart Behind the Craft
At the core of Casella & Polegato is Denis Casella, our master baker, who oversees the creation of everything we make.
Born in Italy into a family of bakers, Denis grew up surrounded by the art of bread-making. He learned the craft from his father, who ran a pizzeria, and his uncle, who still operates a bakery. As Denis likes to say, he was “raised dusted with flour!”
This early passion for bread led Denis to formal studies, where he honed his skills and fulfilled his dream of becoming a professional baker. Yet, while traveling across Italy and the world, Denis often wondered why he couldn’t find bread or pizza with the same rich flavors he grew up with.
The answer became clear: modern baking techniques often prioritize speed and cost over quality, sacrificing long fermentation times and using inferior ingredients. Bread-making had shifted from a craft focused on taste and health to one driven by convenience.
Determined to change that, Denis dedicated himself to mastering techniques that merge traditional methods with modern insights, ensuring every loaf achieves the perfect balance of flavor, texture, and nutrition. His journey from apprentice to master baker took him across Europe and even to Japan, always guided by his quest for perfection.

Francesca is Denis's right hand and the driving force behind all organizational and management aspects of Casella & Polegato. Being naturally gluten-intolerant, she turned her personal challenge into a mission: to create the healthiest and most digestible bread possible.

Casella & Polegato is a family-run artisan bakery rooted in Italian traditions and a commitment to quality. This year, we proudly celebrate our 10th anniversary since opening our doors in Perth. Our bread is preservative-free, made with organic flours, and completely sugar-free. Thanks to our nearly 20-year-old sourdough starter, we craft bread that is both healthy and genuine, reflecting the richness of natural fermentation. Each loaf is handmade with care, using time-honored techniques that ensure exceptional flavor and nutrition.
